Mike Zakany has influenced the Southeast Ohio food scene since the 1970s. Owner of Zak’s Restaurant in Zanesville, he’s known for New Mexico style recipes that are inspired his family’s cooking culture. Mike spent years experimenting with different blends of spices, herbs and chili peppers in his restaurant, finally finding the perfect salsa in 1987. He called that salsa Jose Madrid, after his grandfather. Today, Jose Madrid salsa is available in 25 varieties, from classic staples to seasonal favorites.
